ARUGULA WITH LEMON DRESSING & PARMESAN
Arugula is loaded with calcium, potassium, folic acid, vitamin C, and vitamin A. This salad takes little effort and it makes a welcome change to the standard romaine lettuce I tend to serve my family. No matter if you are looking for a fresh appetizer, a healthy side to your dish, or a quick lunch, this salad is perfect for any occasion. Make sure to buy arugula that is dark green and fresh. The lemon and olive oil in the dressing take the bitterness from the arugula leaves and give it a pleasant and fresh taste. The parmesan shavings complement the looks and taste. I was especially surprised that my children not only loved it but asked for more!
INGREDIENTS
8 oz baby arugula
1/2 lemon
1/3 cup olive oil
1/2 tsp sea salt
pepper
freshly grated Parmesan cheese
INSTRUCTIONS
Rinse the baby arugula in a large colander with cold water. Add it to a large salad bowl.
In a small bowl, whisk together the juice of half a lemon, olive oil, pepper, and salt until well combined. Toss the salad with the dressing. Using a vegetable peeler, shave plenty of parmesan over the salad and toss once more.
Serve immediately.
