AUTUMN PEAR STILTON SALAD
SERVES 4
INGREDIENTS
for the salad:
16 oz organic spring mix salad
2 Bosc pears
8 oz Stilton cheese or other blue cheese
1 cup Walnuts
for the dressing:
3 tbsp apple cider vinegar
6 tbsp olive oil
1/2 tsp mustard
1/2 tsp honey
1/2 tsp sea salt
freshly ground black pepper
INSTRUCTIONS
for the dressing:
Place all the ingredients in a small mixing bowl and whisk together vigorously.
for the salad:
Peel the pears and remove seeds then cut into wedges.
Break the Stilton cheese into large crumbles.
Rinse the organic spring mix and drain well. Place the spring mix into a large salad bowl. Add the walnuts, Stilton cheese, and vinaigrette. Toss the salad and serve with pear wedges.
