The combination of juicy pears, Stilton blue cheese, raw walnuts, and spring greens make this salad a delicious healthy meal, perfect for the fall season. It is sure to impress at your lunch event, or as an appetizer for your fall dinner party. No matter the occasion, it will not disappoint.
Make sure the pears are perfectly ripe for this recipe. Place the pears in a paper bag together with a ripe banana or apple. At room temperature, they should ripen within a day or two. You can tell they are ripe when they yield slightly to pressure.

 

SERVES 4
INGREDIENTS
for the salad:
16 oz organic spring mix salad
2 Bosc pears
8 oz Stilton cheese or other blue cheese
1 cup Walnuts

for the dressing:
3 tbsp apple cider vinegar
6 tbsp olive oil
1/2 tsp mustard
1/2 tsp honey
1/2 tsp sea salt
freshly ground black pepper

INSTRUCTIONS
for the dressing:
Place all the ingredients in a small mixing bowl and whisk together vigorously.

for the salad:
Peel the pears and remove seeds then cut into wedges.
Break the Stilton cheese into large crumbles.

Rinse the organic spring mix and drain well. Place the spring mix into a large salad bowl. Add the walnuts, Stilton cheese, and vinaigrette. Toss the salad and serve with pear wedges.
