GREEK SALAD
Although, unfortunately, I have never been to Greece, I fell in love with Greek food and heritage at the Greek Festival in New Orleans. Greece has definitely been on my travel list ever since. If you can, get the vegetables at a local farmers’ market when they are in season. You can’t beat the taste of ripe, freshly picked tomatoes! When starting the Specific Carbohydrate Diet, I omitted the feta cheese and reintroduced it after a few years on the strict diet. Beware that Feta cheese is not SCD legal!
SERVES 4
INGREDIENTS
4 medium ripe tomatoes
1 red bell pepper
1 small red onion
1/2 English cucumber
6 oz Feta cheese (this item contains lactose and is not SCD legal!)
black Kalamata olives
for the vinaigrette:
3 tbsp red wine vinegar
7 tbsp extra virgin olive oil
1 tsp honey
sea salt and pepper to taste
INSTRUCTIONS
Cut tomatoes into cubes. Halve and slice onion and bell pepper. Peel and slice cucumber. Place all of the vegetables in a salad bowl and toss to combine.
Cut Feta cheese in cubes. Add Feta and olives to the salad bowl.
Place all of the ingredients for the vinaigrette in a measuring cup and mix well.
Pour vinaigrette over the salad.
