MEATBALLS WITH RATATOUILLE
The meatballs in this recipe are simple and nutritious. You can easily fry them in a pan and enjoy a healthy meal in under half an hour. I personally prefer using our gas grill for these - no mess from pan frying and no smell in the kitchen afterwards.
If you can, buy the vegetables for the ratatouille at your local farmers market when they’re in season. Nothing can beat the taste of freshly picked, super ripe vegetables.
MEATBALLS
INGREDIENTS
2 tbsp ghee
1 Ibs grass-fed ground beef
1 egg
1 small onion diced
1 tsp salt
1/4 tsp ground pepper
1/4 cup parsley, minced
INSTRUCTIONS
Place all of the ingredients in a large bowl. With your hands, mix the ingredients well and form small balls about 2.5” in diameter. Add ghee to a large frying pan and place on high heat. Once the ghee is fully melted and the pan is hot, add the meatballs, moving them around a little so they don’t stick to the pan. You can also grill them on your gas or charcoal grill just make sure to move them around so they don’t stick to the grates. Fry the meatballs for about 7 minutes, then flip them over and fry for 7 more minutes. Serve with ratatouille.
RATATOUILLE
INGREDIENTS
2 tbsp olive oil
1 small zucchini, halved and sliced
2 medium ripe tomatoes, cut into cubes
1 small eggplant, cut into cubes
1 red bell pepper, halved and sliced
2 tsp herbes de provence
1/4 cup parsley
salt
pepper
INSTRUCTIONS
Heat the olive oil in a medium saucepan. Add onions and fry till they turn translucent. Add zucchini, tomato cubes, bell pepper, eggplant, and herbs de provence. Fry vegetables, stirring frequently until they turn soft. Reduce heat and cover the pot with a lid. Simmer for 15 minutes. Add salt and pepper to taste. Sprinkle with parsley and serve with the meatballs.
