LAMB GYROS
Greek salad and especially gyros were some of my favorite foods. When I first went on the Specific Carbohydrate Diet, I tried to find out about the ingredients for gyros at our favorite restaurants. Unfortunately, they could not provide me with a list of ingredients and that was it: no more gyros for me!
As I followed the diet for a few years, my cooking became more and more creative and I started altering recipes according to my needs. Not too long ago, I started making my own gyros. It may not be the exact same as you would find at a Greek restaurant but it really has the same authentic flavors, it is SCD legal, made without food additives, and, on top of it, is very, very delicious!
If you find a restaurant that makes SCD-legal gyros, let me know and I’ll go there! I always enjoy when somebody else cooks for me!
SERVES 6
INGREDIENTS
2 lb ground lamb
1 lb ground beef
1 medium onion diced
2 garlic cloves minced
1 tsp sea salt
1/2 tsp pepper
1 tsp ground cumin
1 tsp dried oregano
1 tsp dried thyme
tzatziki sauce (see recipe below)
INSTRUCTIONS
Place meat, onion, garlic, and spices in a stand mixer and mix until well combined. Fill the meat into a large baking pan and sprinkle with some additional oregano. Bake at 350° F/ 180°C for one hour. Carefully drain the fat from the baking pan into an empty container that you can throw away once it has cooled (grease can clog your pipes!). Cut into slices and serve with tzatziki sauce and Greek salad.
TZATZIKI SAUCE
INGREDIENTS
1 1/2 cups plain yoghurt (if you are sensitive to lactose I recommend homemade 24 hour yoghurt)
3” English cucumber peeled and chopped into small pieces
1 garlic clove minced
1 tbsp extra virgin olive oil
1 tsp apple cider vinegar
sea salt and pepper to taste
INSTRUCTIONS
Place all of the above ingredients into a small bowl and mix well. Refrigerate for a few hours. Serve with gyro meat and salad.
