PICKLED HERRING IN WINE SAUCE

Herring salad for New Year’s is rather popular in Germany, where I’m from. My grandmother used to make herring salad for every New Years party and even in the 90s, my grandparents would stay up for the celebration and fireworks. Eating pickled herring in the early morning hours of New Year’s Day is supposed to bring you good luck for the coming year. While I’m not sure if this meal is a miracle worker, I definitely know that it’s the perfect appetizer for welcoming the new year. Personally, I believe in creating your own luck - for me, that was discovering the Specific Carbohydrate Diet. Eating this way has improved my health continuously over the past nine years and the results are what I call lucky! No more doctors’ visits, no more medications, and easing my symptoms over time has been a wonderful improvement of my whole life.
For this recipe in particular, I ordered salt herring online and soaked it in water to remove most of the salt. Then I pickled it in wine, vinegar, and spices for 24 hours. This herring salad not only works for New Years but I find it a great recipe to add to your diet since altering the foods you eat on SCD makes it easier to stick to the diet.

 

INGREDIENTS
4 whole salt herrings (I ordered mine from SCANDINAVIAN Specialties)

for the brine:
1/2 cup white wine (you can also use champagne vinegar instead if you want to avoid the alcohol)
1/2 cup vinegar
1/8 cup honey
1 tsp mustard seeds
1 bay leaf
1 tsp white peppercorns
1 small onion
2 sprigs of dill (optional)

INSTRUCTIONS
In a small saucepan, mix together the vinegar, white wine, honey, mustard seeds, bay leaf, and white peppercorns and bring to a boil. Cover and let cool until it reaches room temperature.

Place the herring fillets in a deep dish, add water so the fillets are fully submerged. Soak the herring for one hour. Then rinse them with cold water and pat dry.

Cut the herring fillets crosswise into bite size pieces and add to a glass container with a tight fitted lid.

Slice the onion into half rings.

Add the dill and onions on top of the herring pieces. Then pour the brine into the container and seal well. Refrigerate for at least 24 hours.

Serve plain or with your favorite SCD legal crackers.
